Cozy Creamy White Chicken Chili

Ingredients
  

  • 3 cups cooked chicken breasts (or rotisserie) shredded into tender bite-sized pieces
  • 2 cans (15 oz each) cannellini beans or Great Northern beans rinsed and drained
  • 2 cans (4 oz each) diced mild green chilies fire-roasted preferred
  • 1 cup sweet corn kernels (fire-roasted or sweet) frozen or canned drained
  • 3 cups low-sodium chicken bone broth rich in collagen and natural body
  • 4 oz cream cheese softened to room temperature, cubed
  • 1 1/2 cups Monterey Jack cheese freshly grated for a velvety melt
  • 1 medium yellow onion finely diced
  • 4 cloves fresh garlic minced
  • 1 tbsp extra virgin olive oil for sautéing
  • 1 1/2 tsp ground cumin for warm earthy depth
  • 1 tsp dried Mexican oregano
  • 1/2 tsp garlic powder
  • 1 tsp fine sea salt or to taste
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp fresh lime juice from 1 fresh lime
  • 1/4 cup fresh cilantro finely chopped

Method
 

  1. Sauté the Aromatics: Heat 1 tablespoon of olive oil in a large Dutch oven or heavy soup pot over medium heat. Add the diced yellow onion and sauté for 4 minutes until translucent. Add the minced garlic and cook for 1 minute until fragrant.
  2. Toast Spices: Stir in the ground cumin, dried oregano, garlic powder, sea salt, and black pepper. Toast the spices in the warm aromatics for 60 seconds to unlock their fragrant oils.
  3. Simmer Broth & Beans: Pour in the rich chicken bone broth, diced green chilies, sweet corn, and drained cannellini beans. Using a potato masher or the back of a large wooden spoon, mash about 1/3 of the beans against the side of the pot to naturally thicken the broth. Bring to a gentle boil, then reduce heat to medium-low and simmer for 15 minutes.
  4. Incorporate Chicken & Cheeses: Reduce heat to low. Add the shredded chicken, softened cream cheese cubes, and grated Monterey Jack cheese. Stir continuously for 3 to 4 minutes until both cheeses melt completely into a silky, luscious creamy chili broth.
  5. Season & Serve: Stir in fresh lime juice and chopped cilantro. Taste and adjust salt and pepper if desired. Ladle into deep bowls and top with avocado slices, crispy tortilla strips, and lime wedges!
