Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with unbleached parchment paper or brush lightly with olive oil.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, sea salt, and black pepper until emulsified.
Place sliced chicken cutlets, bell pepper strips, and red onion wedges into a large bowl. Pour marinade over top and toss thoroughly until evenly coated.
Spread chicken and vegetables out onto the prepared baking sheet in a single uncrowded layer. Scatter cherry tomatoes and Kalamata olives evenly across the pan.
Roast at 425°F (220°C) for 12 minutes. Remove baking sheet, sprinkle crumbled feta cheese over top, and return to the oven.
Roast for an additional 3 to 4 minutes until chicken reaches 165°F (74°C) internally and the feta edges are lightly golden and soft.
Garnish with fresh chopped oregano or parsley and lemon wedges. Spoon the savory pan juices over the chicken and serve immediately!
